"Tannin. It’s all about tannin. Dryness. Texture. I drink this wine a lot (I cellar Tahbilk), and I often serve it with my fave Cru Bourgeois Bordeaux – being Chateau Cissac.... Capable of long cellaring, this Tahbilk has had just enough time under its belt to be doing the Bordeaux thing that Bordeaux does so well. Secondary flavours of leather, tobacco, truffle and cedar. Cook some roast scotch fillet with Madeira sauce." Ben Canaider - The Spectator Australia

What I really like about these aged releases is that despite the age, the cellaring and the improvement that comes with age, you're only paying an extra $1-$2 over the current vintage!  Business wise, it just doesn't make sense and you, the drinker is the winner!

Some of the biggest names in the wine industry look favourably upon this wine, check out these two reviews:

“Medium to deep garnet-purple coloured, the 2009 Cabernet Sauvignon is scented of crushed blackcurrants, blueberry compote and cloves with hints of baking spices, pencil shavings and toast. Medium bodied, the palate is nicely poised, with plenty of pure black berry and spice flavours supported by a medium level of grainy tannins and enlivening acid, finishing long.”  Lisa Perotti-Brown  – eRobertParker.com

“Elegant, fresh and linear. Purple red in colour of medium depth. It’s all fresh, blackcurrant and blackberry, pie-like vanilla crust with a sprinkle of vanilla. The cooler season bringing more precise and higher contrast fruit with slightly chalky tannins. The framework more refined, the result better.”  David Bicknell MW | www.winecompanion.com.au
