Bellebonne is the sparkling wine project of Natalie Fryar, one of Australia’s most highly regarded sparkling winemakers. After 14 years at Jansz Tasmania, Fryar established Bellebonne to focus entirely on expressive, precision-made Tasmanian sparkling. Her Bis Blanc is a non-vintage Blanc de Blancs made from 100% Chardonnay, showing delicate white flowers, lemon curd, white nectarine and toasty shortbread, with bright acidity, fine bubbles and a creamy, preserved-lemon finish.
There’s impressive detail here for a non-vintage sparkling: pure citrus and stone fruit sit alongside brioche, subtle savoury complexity and a long, mineral finish. Dave Brookes awarded the wine 94 points for Halliday Wine Companion, describing its precise fruit and “crystalline mineral line”.
