Jasper Hill Georgia's Paddock Shiraz 2025

Jasper Hill is a small, family-owned winery in Heathcote, with Georgia’s Paddock planted in 1975 and farmed organically without irrigation. This historic vineyard produces around half of the estate’s total output and remains one of Heathcote’s benchmark sites.

For the 2025 Shiraz, fruit was harvested across several weeks to capture a range of ripeness. Each parcel was fermented, pressed and kept separately in oak before blending. Fresh red fruit leads into layers of spice and chalky tannins, creating a vibrant, beautifully structured Shiraz that is approachable now but has the balance to cellar confidently.
