The vines were planted in 1983 and the aim was to make a great Australian sparkling wine. Chardonnay and Pinot Noir, the same classic varieties used to make Champagne were planted and trained and trellised the vines in the same manner as the Champenoise.
Macedon Rose is made using a non vintage blend of base wines, made from pinot noir and chardonnay from our own vineyard. . The base wine spends an average of 4 years on yeast lees in barrel before being tiraged bottled. Each one of our 'Macedon' sparkling wines starts from this base.
