Grown extensively in the Savoie region, in the shadows of Mt Blanc in France. Shadowfax has one of the largest plantings of the grape in Australia grown at the Shadowfax winery vineyard in Werribee. Its natural large bunch sizes and high cropping levels are extensively thinned out to produce more concentration. The long cool growing season of 2021 was perfect for ripening this fickle variety.
Carefully hand harvested fruit was picked in the cool of the morning to retain vibrancy. 100% Whole bunches underwent wild fermentation in small open fermenters. The wine was then pressed and left to rest in older French barrels in the underground wine cellar for 10 months prior to racking and bottling. Only the best selection of Mondeuse went into this with only 120 dozen made.
Aroma: Sappy spice, wild crushed herbs, rosemary with hints of blackberry. Briny black olive and liquorice add complexity.
Palate: Black olive and blackberry pith flavours immediately flow onto the palate. Mediterranean spices including marjoram add further complexity. Raspy tannins and fresh acidity encapsulate the wine giving length and drive. A great wine with rustic food.
