"This is all about freshness and finesse, the bright hue and floral red fruit aromas setting the agenda. Cassis, red cherry, bay leaf and spice all contribute to the flavour, fine-spun tannins and (used) oak to the texture and structure. Catch it while you can." 93 Points, James Halliday, The Wine Companion, 2018.
This wine was harvested in small batches. This was the first Cabernet blend released using the winery's new receiving equipment - utilising onlygravity and vibration. The hopper lifts the fruit in the air before gently shaking the bunches into the destemmer, which in turn removes the stems by swinging a cage from side to side. This process is much more gentle on the fruit, and has the added advantage that shot berries, dry grapes and unripe grapes remain on the stems (and out of the wine).
