Harvest began on the 6th of February, with our Shiraz being picked in early March. A long cool growing season led to excellent phenolic ripeness and intense colour, and an inviting brightness on the palate.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eOur Shiraz was de-stemmed, crushed and pumped over twice a day for nine days. The wine matured for 12 months in oak prior to bottling.\u003c\/p\u003e\n\u003cp\u003eThe aromas are of a fruit compote and freshly baked apple and raspberry pie. The longer you leave it, the more you get. Blackcurrants and dark forest fruits are cushioned by soft tannins providing a plush palate with a hint of Christmas spice on the finish.
