Deep, healthy colour, still with crimson on the rim. The particularly complex vinification was conceived and implemented without a hitch. 47% cabernet sauvignon, 43% shiraz and 10% merlot from three different vineyards with different canopy management and site aspects, different soils, the varieties handled separately and fermented with different procedures. Oak choice and use varied significantly, the sumptuous, black-fruited blend finalised after 20+ months maturation in barrel, then matured for a further 30 months in bottle prior to release. Barrel selected from the most outstanding three Adelaide Hills vineyards from the 2013 vintage. All three parcels were destemmed and cold soaked for 3 days, before being allowed to warm naturally and undergo a two week ferment in traditional open fermenters. The parcels were then gently pressed and transferred directly to 50% New and 50% Seasoned French oak for maturation for 20 months before final barrel selection and bottling in early 2015. Complex aromas of cassis, plum and hints of wild mint and red fruits combine with flavours of dark brooding fruits, vibrant acidity and supple tannins. All varieties are working in harmony to give vibrancy, continuity and persistence across the palate with a subtle savoury finish.
