“Mmmmm, warm and toasty biscuits. Green apple, lemon, white blossoms, honeysuckle and a touch of apricot. On the palate, the finesse of those floral and fruity characteristics join some mouthwatering acidity and that nutty, beeswax and praline finish that lingers and dances away. There’s something slightly saline which only adds to the complexity of vintage sparkling that Fred and the team continue to produce.” Curly Haslam-Coates.  The Winefont.

65/35% pinot noir/chardonnay, from East Coast Tasmania; 65% of base wines aged 5 months in very old French oak for slow, natural mlf; aged 5 years 9 months on lees; disgorged 23 February 2021; dosage of 80% unoaked 2015 chardonnay and 20% oaked 2019 chardonnay. At 6 years of age, this is a toned and taut, pinot-led take on Tasmania's East Coast. Red apple and strawberry fruit is set to a rigid spine of lemon-juice acidity, tempered by the gentle texture and subtle savoury complexity of old oak barrel fermentation. It concludes steely and firm, its acidity heightened by some fine phenolic grip, promising endurance in the cellar.  Tyson Stelzer.  The Wine Companion.
